Cauliflower in cream sauce

INGREDIENTS:

¼ cup of butter

1 tbsp. of olive oil

½ cup of minced onion

4 garlic cloves, minced

¼ cup of all-purpose flour

2 cups of Tres Monjitas® Fresh Milk

Pinch of ground nutmeg

1 head of cauliflower, cut into florets

¼ cup of grated parmesan

¼ cup of grated cheddar cheese

Salt and pepper to taste

Fresh parsley, finely chopped

PROCEDURE

In a small frying pan, heat up the butter and olive oil. Add the onion and minced garlic and sauté for various minutes until translucent. Slowly mix in the flour, stirring constantly, alternating between the Tres Monjitas® and Fresh Milk. Toss in the cauliflower and cook at medium heat for 5-8 minutes until tender. Add the ground nutmeg, parmesan and cheddar cheese. Salt and pepper to taste.

Serve and decorate with finely chopped parsley.

Tip: Steam or boil the cauliflower before adding the sauce but adding it raw to the recipe will make it more flavorful and the cauliflower a little crunchy.  Delicious!
